ADC's with channel selection MUX's need a minimum capture time to allow the input of the actual A/D converter to become stable through the MUX before the actual conversion is started. If you have this time too short, i.e. time from channel selection to start of conversion, then the converted result for the newly selected channel will be affected by the voltage level that was present for the previously selected channel.
