Try a surgery on your gampad, and find out its function. Is it merely a matrix of switches, or some potentiometers inside?
It might have a chip inside for scanning the gamepad and passing the appropriate codes to main CPU.

Depending upon what type of gamepad you have, a suitable interface would be required and you can have gamepad + 8051.
