The Z8 and 8051 are entirely different architectures. Their only resemblance to one another is that they are both 8-bit microcontrollers. If you simply want to get acquainted with microcontrollers in general, either one will do fine. The 8051 is arguably a more popular microcontroller, so could be a better choice to learn on that basis.
