This is where the arguments over "accuracy" and "precision" start. The whole system is calibrated, sensor and instrument, by a Namas lab certified for thermal calibration, not just the sensor, and not just the instrument. The uncertainty of the sensor once calibrated is probably less than 0.015 C, especially since, in application at >>100 degrees, it isn't especially cycled in a bad way, or in a contaminating medium.
