This application appears to be a 'thermal analysis' piece of instrumentation where the temperature is varied in a linear manner and the results monitored as to temperature and some other varialable (viscosity). I have worked in this field for many years and you should prepare for a diverse set of tasks; resolution,accuracy,precision,polynomial correction of sensor nonlinearities, stray thermocouples everywhere, balanced # of via's on the pcb's, all solder from the same roll, and most of all cold junction compensation, as this too must be to the same or greater accuracy,precision,resolution etc,etc
