We use a modular board system I designed close to 20 years ago, (ouch) where there is a central processor, and a full AD bus to a motherboard and plugin system with various configurable interfaces. So although maybe nowadays we might have used multiple serial ADCs, it still seems like a viable solution to me with the parallel scheme. And the plugins ALL carry 8255s. Still.
