The sole and only purpose of a watchdog is to handle the unforseen. To introduce something unforseen, such as 555 logic, in that equation totally nullifies the purpose. If your project can not handle $1 or whatever for a WD chip it must be uncritical enough that a "manual watchdog" (power on, power off) is sufficeient.
