MCU's with built in Flash memory are the best for code protection if you ask me. And the beauty is that with three bits allocated for security, you can vary the level of security. Just get hold of a 89c51 or P89c51RD2 data sheet and read the deatails yourself.

The code protection offered is almost invincible as far as I know.
