So what kind of electronics does your bathroom scale have? If you could kinldy reply that a lot of postings with guesswork based suggestions can be saved.I think some members asked you this right at the begining.

Since you want to read the weight with MCU and display I suppose that the current one is just a dial based one. And if so there may not be a load transducer and if so your chances are very bleak. You will have to start from scratch.Once again guesswork..
