Hi Babar,
My father did this when he was 16 (and now he's 60+) using light beams. The bullet is only travelling at Mach 1 (330 m/sec), so a 1 inch bullet takes 25.4/330,000 sec to pass a sensor or 84usec which is a very long time.

Beam break will work just fine.
