If you're just sendind individual bytes, probably the simplest is just to have the receiver always echo each received byte to the master (maybe inverted).
The master doesn't start the next byte til it's had this acknowledgement of the previous byte.

For longer messages, add a checksum or CRC, and an acknowledgement from the receiver back to the transmitter.
