I think you'll need to come up with at least a part number for the display you are looking at if you want some help. Even then, chances are you'll be asked to read the data sheet and come up with some more specific questions.

Unless you're simply asking how VFD work instead of how to interface an 8051 to a particular variant VFD...in which case you show be able to find something with Google. Or try http://www.howstuffworks.com.
