I feel you need a 5V part along with ADC and cost effective too then you can opt for PIC for this project I have seen plenty of people using PIC in such environment even in industrial sensors also .
BTW Cygnal is also not a bad choice but will be very costly if compared to PIC though feature wise I find them some what similar , I2C ,CAN,USB,SPI,ICSP/ISP etc etc .
