A very good choice is to use an expanded I/O microcontroller. For a lot of I/O look at the Silicon Labs (Cygnal) C8051F020 part family. There are eight 8-bit ports for a total of 64 I/Os. And on this part, with 64K of onboard FLASH and 8K of SRAM there is typically no need to add external memory devices.
