Another very nice way to interface SPI may be for you to use a small low cost microcontroller, like the Philips LPC932, as a speciality SPI controller. This part has an on-board SPI controller so the interface to the EEPROM device can be hardware interface driven. Small and simple software programmed into the LPC932 can give the specialty peripheral device quite a range of personality. For example it could packetize or buffer the data into/out of the EEPROM and then interrupt the main controller when data is ready. You could easily devise an interface that suits the parallel side into your system. You may find after studying the LPC932 that you like the part so much that you end up using it for the main controller on your board!!!
