Hi John,
Till now I have had no problems readin from EEPROM and I guess you can perform n number of reads. The first article here belows from philips tells that you can perform read unlimted number of times. The second link is a test report conducted on a EEPROM... You can go ahead and happily implement the unlimited read operations on EEPROM.
