Do you also copy all the Standard 'C' headers - stdio.h, etc - not just the Keil-specific ones?

Why not?
It's not the way I do it, but it doesn't sound unreasonable to me.

It has advantages for source code control - ensuring that everything you need is present & visible in one place.

It could also protect you from nasty surprises if something gets changed in some mysterious folder deep in the depths of your Keil installation...
