We need go back to root. If you really need with SPI then just use appropriate derivative. Buy, for example, AT89S53, AT89S8252, AT89C51RD2 etc which have SPI built-in.

Indeed, you may try "bit-banging" (emulate protocol in software by manipulating with each signal line manually). But it will come nightmare for you and I see no reason with it, do you?

In short: always select derivative which is appropriate for environment requirements. Or vice versa: select external hardware compatible with that your MCU has built-in.
