Yes.
Sometimes even the measuring of capacitance between the both lines can be interesting.
Of course, you should only make such a measurement, if you are totally clear, that any of these potentials is allowed to be directly touched (use of Saftey Class I and II)!

2. Source impedance. This is the real problem- you have no idea unless the manufacturer specifies - is there any way to find this out ?

Connect first a load of >1MOhm, then 2kOhm (or even less) and observe how the signal goes down. From this signal damping the unknown source impedance can easily be calculated.
