If the event is to be in June, there is time to include some sort of 8051 light design challenge. Something like a Furbee-Hack Challenge?

I'd recommend selecting something that is relatively easy to start with. If it were too ambitious like a robot challenge, it could consume too much time and discourage attendance by those whose projects had disasters.

Furbees seem to be everywhere and are cheap enough, I assume. If you take a furbee and "Give it a New Talent or capability utilizing an 8051" it could keep the challenge light enough to be fun.

I'd suggest not requiring the add-on to be incorporated into the Furbee OS. Even Furbee assessories like a Furbee-Crusher or a Furbee-Hibachi should be in spec.

Take plenty of digital photos because the web members will want to see these...
