Just a note of caution; it will be nearly impossible to get 16 usable bits from the converter, regardless of type. It can be done, but it will require very careful design and implementation. In addition, the noise on your signal most certainly exceeds 1/65536, averaging may be able to clean it up, but that would increase your sample rate. You may want to low-pass filter the signal using the Nyquist frequency as a cutoff. If it is acceptable, use a 12 bit converter and increase your .1mm to .244mm. Of course you can use a 16 bit converter and only use the resolution that is necessary (~14 bits).
