You have a great idea! Here's a link from a post by Michael Karas in which he proposes a similar thing except he's using the boost configuration.
http://www.8052.com/forum/read.phtml?id=42795 If you're willing to add a current sense resistor, you'll be able to (1) improve voltage stability by using a current control loop as an inner loop while voltage control is performed as an outer loop and (2) monitor load (LCD) current and actively limit the brightness so as to not demand more from the supply than that which it is capable.
