Well I have made some improvements by reducing the thickness of the tubing wall. I placed the thermistor firmly against the tubing and have the sensor and tubing insulated to eliminate the cooling form the surrounding air. I collected enough data to be able to have a look up table to adjust for the difference between the temperature of the water and the water surface. This way I don't have to spend more money right now. I will keep in mind all suggestion and possibly try some of them out when budget permits. Thanks everyone
