You will find it very hard to get 16 bit performance from controllers with embedded ADC, with care to turn the cpu to idle while an accurate reading is made.

If you really need true 16 bit performance, and that is very very difficult, then you are better off with an external ADC.

On the LCD, you can do it in only 7 lines in total by the way.
