Have a look at an 8 port '51 such as the SILabs F122, I have 2Mbyte parallel flash ($2.87) attached to one for data storage.

It is next to impossible to handsle a large flash and RAM and... in a standard 4 port chip (well, really a 1 port chip P0-P2 are memory, p3 is usually used for the alternative purposes except for a pin or two.

Since you are going to have a flash, stay away from banking. It slows you down more than you want. You need a couple of functions ReadFlash and WriteFlash to take care of the extended addressing. In addition, writing flash is not just xxx= yyy (c) or movx (asm) so you will need the write routine anyhow.

Re flash I strongly recommend SST, the erase time is in milliseconds where (most) others require 20+ seconds for a chip erase.
