AD conversion is always the question about how much a fraction of reference voltage is the input voltage. The same with DA conversion: Output voltage is always a certain fraction of reference voltage, defined by the digital code. To learn more about ADCs and DACs go to the websites of Analog Devices, Texas Instruments, Linear Technology, etc., look for their ADC/DAC products and just have a look into some of their datasheets.
