I have some questions:

1. The surface of sensor, is it galvanically isolated to signal wires and cable shield?

2. Is there a cable shield?

3. Sensor plus cable doesn't seem to be shielded enough against ESD. So, you would need an ESD protection at input of ADC. Something like cera diodes or transzorbs. You will also need a strong low pass filter at input of ADC (cell phone radiation!!).

4. Wouldn't it be advantageous to have more than only one skin temperature probe at the baby?
