Hi Martin,
Like Steve, I learned just enough about GPIB to pass the course I was taking (though not quite as many years ago). I've used GPIB, in fact I still have several instruments and a computer that I could hook up with GPIB should I choose. But in your case GPIB would be a poor choice. GPIB is intended to accomodate communication with, and control of, complete instruments. It really isn't particularly appropriate for chip-scale interconnections. I'm not saying it wouldn't be possible, but it would be fairly pointless. It'd be a lot like driving a screw with a hammer. Why don't you start by researching the Inter Integrated Circuit (often referenced as IIC or I²C) serial bus by Philips. I think you'll find it much more appropriate for your application.
