Yep, I've given up on the cameras and I think I've found the right camera + processor module instead.

COMEDIA have a colour VGA camera they call the C328R that compresses images to JPEG format, and that allow you to retrieve the data via a 3.3V RS232 link.

RoundSolutions have the same module and market it as the CAM-VGA100.

The camera + processing module combination met the spec as it allows you to download in any order, variable size chunks of the stored JPEG image data through the RS232 interface. I can then retrieve, frame and send image data via Ethernet and TCP/IP as it is requested by the protocol stack. There's no need to buffer a whole image. Perfect for the 8052!
