No, you don't need a keypad, and you don't need a display!

I am looking rather simple solution.

So don't overcomplicate with unnecessary extras like keypads and displays!

eg, Just use a rotary switch to set the delay.

Some of the really cheap little microcontrollers do have analogue-to-digital input - so you could use a potentiometer to set the delay.

Please explore in this direction.

Your original post did specifically ask about doing it with a microcontroller, didn't it?!
