How about an API, so that users can provide their own simulations of the outside world?
Something like Keil do (although theirs seems somewhat impenetrable!)

Of course, an example using this API could be provided which would use the PC's serial and/or parallel ports.

I think the FTDI USB/Parallel module could come in very handy here...
