HI
I have industerial experience and worked with THCs.

You do not use ADC0804 it is very bad choice for your design.

check these:

AD7715,AD7719,AD7714 sigma delta converters from www.analog.com
check also AD594/5 from analog device.

You can do linearization and compensation and calibration all in firmware and use a 10k NTC with good accuracy for ambient measuring.
