Hi Deepak,

Dataq Instruments sells a beginner data acq board with PC software for about $25. (www.dataq.com) No 8051, mine has a (gasp!) PIC on it.

Just hook it up to your PC serial port, connect the sensors to the analog inputs. If you need to do any signal conditioning, amplification, you'll have to do that separately.
