For many applications I have found the following circuit to be suitable for measuring temperature for a thermostat type application. The circuit output should be buffered with an amplifier that provides gain to extend the sensor voltage to the input range of your A/D converter. The sensor has a negative slope of about 2.2 mV / deg C.
