I prefer the Dallas DS1820 for this application. Calculations are simple, interface is OK. Documentation fair. Also National LM75. This method may be slightly more costly but well worth it in my opinion for small production number products. If I were going to produce many thousands of a product then I would go through the analog work of a thermistor. You may find that with op-amp and ADC, direct-to-digital is less expensive.
