There is two condensators from each pin of the crystal to the GND. For sligtly trimming the frequency you just need to replace one of the condensators with a trimmer.A 15-30pF will do.

The oscillator won't work without the condensators. You cannot leave them out

I recomend you to leave the hardware as is and correct the frequency shift by software.
