Hi Farshid,
Keep in mind that little note about ALE pulses dropping when external data (or code) is accessed. It might affect your timing... ALE as a clock for your ADC might be faster than you want. Read the datasheet carefully. You will have better control over the ADC if you bit-bang the port pins you are using as an interface, and even then given the timing requirements you might have to insert NOPs to fine-tune setup and hold times.
