A third comment.........Using a single layer PC board like you did does not really come close to being able to provide you a grounding system that will be needed for an A/D converter. From what I can see the A/D is connected up much the same way as one may connect a digital chip. It is unlikely that you will be able to get really clean and noise free inputs to the A/D with the design you show.
