no approach is "better" use the one that match your application. If -max is your zero result, use 0-5V out, if zero min is your zeroresult, use +- out.

If you are not hunting for extreme precision, you may get by with a single supply op-amp and save the extra +_ supply voltages. This, of course will only give you ~0 ~4.5V out.
