I'm not quite sure, but I think it works as follows:
Beating your piezo crystal results in a strong voltage peak. When giving this signal to an amplifier running at +5V and 0V, the output of this amplifier will clip. And: This clipping will last the longer, the higher the punch is. So, measuring the time duration of this clipping should provide you the velocity.

Take care, that hitting a piezo crystal is not the same as hitting a standard drum set. With the latter you will always get a strong signal, even when hitting the drum set not optimally. But with a small piezo pad, the punch level will differ much more dratically. So, you might need some digital compression, which improves the level of unhappily hit pads. Means, levels under a certain threshold should be rised up to a minimum level.
