I looked at the dataflash site last night and noticed they're all 2.7 or so volt; as Craig pointed out I could probably use a 74125 without any problems to interface them. They can be interfaced with any 5V logic. Their abs. maximum input voltage is 6.25 V (while minimum Hi is 2 V). I use them together with 5V components, where only their power supply is lowered to 3V.
