Twenty years ago, I went to review a project in which a guy had fitted 'digital load cells' to a truck tipper trailer. They were strain gauge cells with in-built ADCs (this was very avant garde at the time). His trailer chassis was bussed with I2C! Four cells and probably 60-100ft of wiring! He claimed it worked, and it did on the demo. I wouldn't have trusted it at all, but was impressed...
