I also considered using more than 1 chip on same bus. Actually, I can connect two Atmel 24C1024 on same IIC bus. But my problem is that with max 1Mhz IIC bus speed the access time is not acceptable since I need to do some sequential search in data blocks.
If reads are the issue, flash is just fine, the 'problem' with flash is the read/erase/write time you need for each and every write. Another Flash issue may be the endurance, I do not know the endurance of the devices you suggest, but if it is one of the 10.000 cycle thingies (and maybe even if it has higher endurance), you need to calculate if it is good enough.
