Would a low pass filter on the ADC input help? What (roughly) would I use as a cutoff frequency - presumably below 50Hz to avoid mains hum? I can't turn the knob 20 times per second, so I figure that 20Hz should be fine.

An RC network with a 0.1uF cap and an 80k resistor?

That would give me a Fc of 20Hz I believe...

Fc = 1/2πRC

RC = 1/40π for Fc = 20Hz

RC = 0.008

I hope that's correct.
