Many of the Cygnal parts meet your requirements. I recall in a previous thread you wanted end users to be able to update firmware. Cygnal flash memory is ISP and IAP programmable, so you can write an in-application routine to reprogram via the UART, instead of the JTAG port as discussed previously.

Also, is temperature range a concern? As I recall, even passenger compartment temperatures can exceed 100 C under the harshest conditions. Many 8051's can only operate in 40 - 85 C (Cygnal for example). Also as discussed previously, flash retention diminishes under high temperature. The only suitable 8051's I know of (I bet there are more) to operate under these conditions are Infineon C5xx series. Unfortunately they only come in OTP and ROMless, but if you are only looking to update a few variables, you could strap on a serial EEPROM.
