Hello Mak,
I had once used 7407 open collector drivers between the microcontroller lines (P89C52RD2) and the LCD, 2 line x 16 Character, the pullups should be mounted near the LCD, we were able to drive more than 5 meters.
before this solution we had the same symtoms which you are now facing.
