There is employment opportunities in x86 embedded, ARM embedded, '51 embedded, PIC embedded and many more areas. I can not tell you what to be interested in and I can not tell you where the main opportunities are in your area.
However, what is shown at

seems to be an overview class, there is no way you are ging to be fluent by taking "Embedded Systems Programming 90 hrs". This, however may very well be a good thing since nobody can teach you fluency, only experience can. Just do not expect that at the end of this course, you are going to make top dollar as an "embedded systems expert", but it may very well be enough for someone to take you on as an apprentice.
