Maybe you can try the following circuit?




This circuit is a Schmitt trigger providing hysteresis, built arround CMOS inverters of CD4011.

Adjusting is done by connecting input to ground (0V) and very slowly (think about time constant formed by 22k and 4ยต7!) turning the trimpot, up to the moment, when the output changes it's state.

Please use shielded cable for the connection to sensor.
