I'm looking to get up to speed on FPGA for use with 8051 microcontrollers
The FPGA/CPLD industry is way ahead of the '51 industry in the transition to 3.3V (and lower).
For the above interest I suggest you use a 3,3V uC, do not get into the quagmire of "5V tolerant FPGA" with a 5V uC
