I must weigh in on this one :-)
I were once part of a team developing mail scales. The loadcell is a BEAST. It is not linear, it will drift, it will react to temperature, give it a bump and zero changes. In the company with (probably) the most know-how in the world regarding scales, it took 2 manyears to adapt a new loadcell to be good enough to satisfy the approving organization for "legal weight" (Weights & Measures).
If you are making an actual scale, look out. In another project where the scale was empty most of the time and only a short weighing happened - when known to the microcontroller, I used automatic zeroing, temperature compensation and required daily calibration for max and that way got by with a relatively fast development.
